The Smoke House
As you approach Lime Wood you may notice a small brick house tucked under the brow of a hill. This is our Smoke House. With sheep grazing outside and a table and chairs for you to relax, it's beautifully located and is where we smoke and preserve our own Salmon (and plenty of other things)!
Our head chef Luke holder and his team of chefs are all regular visitors to the Smoke House. After having left their kilo of salmon to cure for 10 days, Luke and his team carry it down to start the smoking process. Placed in the large BBQ like oven, the hot dry air begins to smoke it; the flavours begin to mature, resulting in exquisite tasting Salmon.
Lime Wood is the only hotel in the New Forest to have its own Smoke House, so please do come and take a look....its doors are always open to explorers! Follow the path around our Lake, past our wooden garden swing, down the stone steps and you'll find it.
What we produce:
- Smoked Salmon
- Dry cured ham (Parma ham style)
- Lavender cured Loin of Pork
The Smoke House is a big part of what we do here at Lime Wood, we've been experimenting with recipes over the years.
Smoke House produce will be featured heavily at the bar in Hartnett Holder & Co, they'll always be a selection available at any one time.
