INTRODUCING LIME WOOD’S ACCLAIMED HEAD CHEF, LUKE HOLDER
Born in the UK, raised partly in Dubai and having travelled around the world, Lime Wood’s head chef Luke Holder has a wealth of experiences and culinary influences. Since joining Lime Wood in 2010 he has lead the team to success, with The Dining Room restaurant having recently been awarded three AA rosettes. Most recently Luke has played a lead role in establishing ‘Raw & Cured’ a new health bar concept at the newly opened luxurious Herb House spa at Lime Wood, in the heart of the New Forest.
Luke spent ten years of his childhood with his pioneering family in Dubai where, even from an early age, he developed an interest in food and cooking. On returning to the UK in 1998, he was determined to pursue a career in fine cuisine. He took matters into his own hands and called chef Chris Galvin, a bold move which led to him securing a position as commis chef at the exclusive Orrery restaurant in London.
Having learnt the ropes for a year at The Orrery, Luke gained extensive experience in the kitchens of some of London’s finest and busiest restaurants including The Oxo Tower on the South Bank. After this Luke when to Europe where he spent four months working alongside Stephane Buchholzer, a specialist in molecular gastronomy; then Florence, and the kitchen of three Michelin-starred Enoteca Pinchiorri.
At Lime Wood, Luke heads up the team responsible not only for The Dining Room, but also The Scullery and Raw & Cured. The Dining Room is the acclaimed restaurant serving a menu of mouth-watering seasonal dishes, created using the freshest locally-sourced ingredients. The Scullery, a classic British concept restaurant transports diners to an 18th century country house kitchen serving a menu of traditional British favourites. The latest addition is Raw & Cured, the health focussed cafe at the recently opened Herb House Spa adjacent to the hotel, where a range of freshly made salads is available, complimented by smoked fish and cured meats hand made by Luke and his team and smoked or cured in Lime Wood’s own Smokehouse.
Luke and his team greet all the seasonal food, gathered daily, into the kitchen by the hotel’s dedicated forager. Whilst much of this food is as Luke would expect for the time of year, he additionally continues to embrace any new finds or surprising wild produce, turning them into mouthwatering dishes that delight all that eat in any of Lime Wood’s three restaurants.
