Our Chef Apprenticeship Programme offers aspiring chefs of any age or experience level an accredited training pathway, giving you the opportunity to develop your skills, knowledge and confidence across our kitchens.
Working alongside Luke Holder, Angela Hartnett and their teams, you’ll learn in a positive, produce-led environment, working with some of the very best ingredients from our hand-picked British and European suppliers.
From low and slow cooking in winter to fresh, light dishes in summer, you’ll learn how to make the most of the seasons, with time spent across fish, meat, sauce, larder, pasta, pastry and afternoon tea.
You’ll also spend time at Raw & Cured, our predominantly plant-based spa restaurant, creating fresh, nutritious dishes alongside high-quality protein for our gym bunnies!
Rooted in Italian simplicity and inspired by the best of British and European produce, it’s a chance to learn from some of the best in the business while gaining hands-on experience across every part of the kitchen.

The Qualification Bit
We partner with Umbrella Training to deliver our apprenticeship programmes. You’ll have a dedicated Chef Assessor to guide you through your qualification, with regular visits and observations along the way.
Your portfolio will live on BUD, an online tracking platform, where you can upload your work with support from the kitchen team.
From Level 2 through to Level 6, there’s a pathway for everyone.

The Fun Bit!
You’ll also get to experience all the things that make Lime Wood unique, from guest chef pop-ups with the likes of Nathan Outlaw, Phil Howard and Nieves Barragán, to smoking and curing in our onsite smokehouse, cooking for special events, spending time with our beekeeper and getting stuck into the greenhouse... and tastings, quite literally, at every turn.

Our Partners and Suppliers
We often head out to visit our suppliers and get a behind-the-scenes look at where our produce comes from and how it gets from field to plate. We regularly get our hands dirty, swapping chef whites for wellie boots, visiting the likes of New Forest Fruits to see their asparagus and strawberry production, as well as our very own patch at Four Acre Farm, where our chefs have been known to harvest produce in the morning before cooking and serving it up for dinner that same evening.
And it’s not all work-ey stuff either! The team have also been known to venture out and visit some of Luke and Angela’s foodie friends, with the occasional dinner at places like London’s Lisboeta thrown in for good measure.
Don’t worry, we do the serious stuff too. You’ll cover food hygiene, manual handling, COSHH, fire training and even some of the fundamentals of running a hotel.
For us, it’s all about keeping our team curious, learning and interested in what they do.
